Why the Ultra, and why single 15 kHz is the right answer
One thing to clear up, because some listings get it wrong: the Simplex Ultra is a single-frequency 15 kHz VLF detector, not a multi-frequency machine, and it has no "iron boost" mode. Do not let a mislabeled listing talk you out of it. 15 kHz is a proven all-round frequency, sensitive to small gold jewelry and coins yet stable on typical soil, and it is a big part of why the Simplex platform earned its reputation. What you are paying for is not a frequency gimmick; it is a genuinely waterproof detector with real tone and recovery control at an honest price.

What the Ultra-only settings do in the field
Dealer pages list "Coin and Relic ID scale" and "recovery speed" as bullet points and stop there. Here is what they change. The Relic ID scale moves the ferrous (low-tone) range from 01-14 up to 01-39; Nokta recommends it for relic hunters because it gives steadier IDs, while the default Coin scale suits parks. The same target reads a different number on each scale, so pick one for a site and learn it. Recovery Speed runs from 1 to 5: a low setting buys depth on clean ground, a high setting separates a coin lying next to a nail at the cost of some depth. Target ID Depth (Low, Medium, High) sets how deep the Ultra will still show a number; Low gives the steadiest IDs, High shows IDs on deeper targets that may jump. None of these settings exist on the Lite or the BT, and they are the reason a beginner does not outgrow this machine in a season.

Who it's for, and its limits
The Simplex Ultra is a beginner metal detector you will not outgrow in a season: the first-time buyer who wants one waterproof machine for parks, fields, creeks and the beach; the coin and relic hunter who wants real tone and recovery control without a big price; and the experienced detectorist who wants a light, fully submersible second machine. Beach mode is built for wet salt sand and alkali ground: it balances across a wider range than the other modes and keeps the ferrous range notched out.
What it is not: a multi-frequency machine (it runs one 15 kHz frequency; frequency shift is for interference), a wireless machine under water (Bluetooth keeps working with the coil submerged but drops once the control box goes under, so fully submerged hunting needs Nokta's optional waterproof headphones), or a nugget specialist. It finds gold rings and jewelry like any capable 15 kHz VLF. Small nuggets can register too, but gold shares target-ID ranges with trash like foil and pull-tabs, so expect to dig some junk, and know that the Ultra has no dedicated gold mode. Yes. The whole detector, control box included, is IP68 rated and submersible to 16 ft / 5 m, so shallow water, mud, and rain are all fair game.
